Here is my absolute favourite thing to eat…
Ok, you get a packet of tortillas, I buy the extra light ones, and cut them into quarters, then quarters again.
You lay them out on a baking tray and cook in a hot oven until golden brown and crispy. Voilà! Healthy corn chips!
Next, you combine in a big bowl, a can of sweet corn, a can of kidney beans, some halved cherry tomatoes, finely sliced spring onion, a diced avocado, and chopped fresh flat leaf parsley. Salsa!
Lay your healthy corn chips on your plate, top with your salsa and a handful of low fat grated cheese and pop in the oven until the cheese has melted.
Take out of the oven and dollop with low fat sour cream.
YUM! I seriously could eat this every night of the week. Honestly, I could.
